Autumn Chicken Stew........

Whipped this up yesterday on a whim.  I love soups and stews and this is very yummy and also very WW friendly.  The Youngun gobbled up a bowl of it as well!  If you are on the WW train and would like the points value, just leave me a comment and I'll let you know.  We are going to have it for lunch today with some cornbread!  Yummo!

Goodwife's Autumn Chicken Stew


  • 1 cup dried white beans (I used northern beans)
  • 3 skinless chicken thighs, cooked, deboned and shredded, save broth
  • 7 cups chicken broth
  • 2cups diced carrot
  • 2cups diced onion
  • 8 oz package button mushrooms, sliced
Put beans in large pan, cover with water and bring to boil.  Boil for 2 minutes, turn off heat, cover and let sit for 1 hour.

Drain soak water and add beans to crock pot with carrots, onions, and mushrooms.  Add in shredded chicken and 7 cups of broth.  If you don't have enough broth to make 7 cups, add in some water. 

Then add in your favorite seasonings.  I used garlic powder, salt, and a bit of chipotle pepper.  I also seasoned my chicken really good with sage, white pepper, and garlic powder when I cooked it so the broth had lots of that good flavor in it.  Cook on low all day, or on high until the beans and veggies are as tender as you like them.  I took it off while the beans were still a bit firm because we'll reheat and eat it all week.  I also plan to freeze some for quick meals.

  1. Looks wonderful! Bet it smells wonderful too... I love fall and cooking soups,stews and chili's. Gonna have to put this one on my grocery list for next week :)

  3. Mmmmmm, I love comfort foods. Another reason I like the cooler weather. This looks really good. I'll have to try it. I'm always looking for new things to try that are easy.

  4. Looks yummy. I couldnt get away with the shrooms though. Only me and the youngest kiddo will eat em. Maybe I will switch it up a bit to suit the others taste buds and give it a try....I would love it the way it is though ; )
